MIGROS Cooperatives Switzerland

For over 15 years, Salvis has been an important partner for all MIGROS restaurant concepts throughout Switzerland.

Salvis supports the MIGROS gastronomy and MIGROS supermarket with a complete package of technology and services which are specifically adapted to the individual cooperatives.


Equipment package

The decisive factor for the long-standing cooperation is the economic efficiency of the Salvis Combi-Steamer and the certification according to ENAK, with the aim of reducing energy, water and chemical consumption.
Producing energy-efficient and reliable appliances for commercial kitchens is one of the principles according to which Salvis develops and produces its current appliances.
With the Salvis CucinaEVO combi steamers of the Pro model series, many small ecological measures are built in as standard. Triple glazing or "light off" in the cooking chamber after 15 minutes and the heat exchanger are just a few features.

Depending on the operating concept, appliance combinations are configured individually. For example, in the 2nd line, mainly in the production kitchens, the Salvis CucinaEVO combi-steamers of the 2011 QT size are used to support large-scale production. The Salvis CucinaEVO 611QT and 1011QT models are often used at the front thanks to their double cooking chamber size in GN 2/1 format - if necessary also as a space-saving tower solution. The crosswise insert is safer to handle and the enormous capacity is particularly appreciated, along with the simple touch operation.

The modular Salvis Smartline snack units have been an important part of the freshness concept in front of the guest for over 25 years and can be found in almost every MIGROS restaurant The 17 models are extremely practical to use, especially in serving but also in catering. Whether frying, grilling, keeping warm or woking, there is a solution for every concept. The appliances are easy to use with a simple rotary toggle control without instruction for every cook. Cleaning is easy and the units can also be removed if necessary, ensuring hygiene under and behind the units.

The powerful Salvis Fryline deep fryers have been ENAK certified since 2011, testifying to transparent energy efficiency. All models SFR21, SFR31, SFR41 and SFR 42 are equipped with a flush membrane keypad. The more than 400 deep-fat fryers so far have been supplied with an optional automatic basket lift and oil filter pump system.
With the innovative flat tube heating element and electronic thermostats, the Salvis Fryline deep fryers meet the requirement to ensure perfect frying results at the lowest frying temperatures (165°-170°C), in accordance with the new acrylamide regulation (EU 2017/2158 of 20 November 2017). The acyrlamide regulation ensures a high level of consumer protection in terms of food safety.


Service package

New culinary concept new training, this is the credo of the MIGROS Restaurants management staff. To ensure that all staff members have the same level of knowledge, training was provided from the ground up. The chefs of Salvis AG on site as well as the training competence centre of Salvis AG, Oftringen played a dual role. New recipes and presentation possibilities were worked on in practical applications, and new thematic blocks such as meat, fish, vegetarian or baked product refinement were taken up again and again.
Salvis Key Account Manager and Sales Manager Sascha Hofer takes the lead together with the MIGROS project managers, especially in planning tasks and initial instructions on site. Extra packages have also been put together in the area of maintenance and safety. They keep the operating costs to a minimum and ensure the longevity of the Salvis equipment even during long workload peaks.
